Bang Bang Skinny Shrimp

Who doesn't love a spicy dish made skinny? Well the ChubbySkinnyGirl has found a recipe that will tickle your tastebuds and spice up your life. 

Bang Bang Sauce Ingredients:
3T of chobaini plain Greek yogurt
3T of chopped scallions
1 1/2 T sweet chilie sauce
1/2 T sriracha sauce (add more if you desire more spice)



This sauce is fabulous on shrimp or chicken and is great for dipping. 

The Greek yogurt cuts the calories, fat & carbs into 1/3 of the amount in regular spicy sauce you get from the Resturant. Looking for a little crunch? Use Panko breadcrumbs and bake in the oven.  Great for dipping as well at parties.

Frittata The Healthy Way

     When I'm not working on a photoshoot or doing hair & makeup for weddings, I try to enjoy my Sundays.  They are usually filled with family, eating, low-key exercise & sleeping in if I can stay in bed past 8:30 am. This Sunday, I made a delicious frittata for my sister & her friends. My mom & grandmother would always make them with bacon, bread & fruit on the side. Also, its great to add any leftover meat or veggies to the bake. The meat or veggies have sat in their juices & had more time to marinate over night.  Resulting in delicious flavor for your bake!  Today, I made a heather version without a crust that can feed a family of 8 easily.  

Ingredients: 
- 10 eggs
- 1/2 cup non-fat milk
- salt/pepper/garlic seasoning
- leftover sausages/peppers/onions already cooked in spices & oil
- low-fat feta cheese

Directions: 
1. Spray non-stick spray into average glass pie pan. 
2. Add eggs, salt, pepper, garlic, milk & whisk together until fully blended & pour into glass pan. 
3. Cut up leftover sausages, peppers & onions and add to pan; spread evenly to ensure that every bite is delicious. 
4. Sprinkle feta cheese on top to add some delicious cheesy goodness.  
5. Bake 350 degrees for 30-45 minutes (depending upon your oven you may bake less or more; best to check the middle with a fork).
6.  Enjoy with ketchup or add some spice with Franks Red Hot Sauce. 



This is a great to make for an individual daily breakfast to take on the go. Just cut recipe in 1/2 or 1/3 and bake them in cupcake pans.  Super easy & healthy.

Grandma's Lentil Soup

     Growing up in an Italian household, there was always food around for any reason and occasion.  I'm talking about even if it was a Monday my family would find a reason to put together a 4 course meal with Italian cookies to finish.  Once I made the decision to become a vegetarian, a lot of the dishes I grew up with I was suddenly unable to enjoy.  One of my favorite dishes that I can still eat is the homemade lentil soup that my grandmother would make from scratch.  Lentils are a great source of protein, low in calories, high in fiber, provides a great source of important minerals and virtually no fat. Sigh me up sista!!!!  You can enjoy lentils many different ways but my favorite is in a delicious hearty homemade soup.  My grandma taught me how to make it and has been a classic in our household for quite some time.

Ingredients:
- EVOO
- 3 cloves of garlic
- Salt/Pepper
- 2 bay leafs
- sprinkle of hot pepper (more if you want it on the hotter side)
- 1 1/2 Cups of lentils
- 3 cups of water
- 1 bag of celery (roughly 5-8 stalks) chopped
- 1 bag of carrots (larger pieces cut in 1/2)

Directions:

1. Set large pot on medium heat & fill the bottom of the pan with EVOO
2. Add chopped garlic and sauté until golden
3. Add celery & carrots; season with salt/pepper & stir; cook for roughly 3-5 minutes (this will create a small broth)
4. Add water and turn on high heat; bring to boil
5. Add lentils, season with more salt/pepper; add dash of hot pepper and bay leaves to pot; stir & place on medium heat
6. Cook lentils for 45 mins to an hour or until mixture is thickened (the longer it cooks the more the flavors will cook together & will become thicker.)  I usually remove the bay leaf here but some choose to leave in for extra flavor. If mixture becomes too thick you can add another 1/2 cup of water. 



     This dish is great for lunch, an appetizer at a party or just to enjoy as a main for dinner. Add shaved parmesan cheese for an extra delicious bite to the dish.  This can also be cooked in a slow cooker however I would add only 1 cup of lentils to 3 cups of water. Sweet Treats At Little To No Calories!

 One word ladies . . . . . CHOCOLATE!!!!!!!!!!  I don't know about you but I'm always trying to find ways to get my chocolate fix WITHOUT the calories . . . .Yeah right! As if there's such a thing!  However, I'm here to tell you that I've figured out a way.  I'm talking about 1 serving size worth of a yummie chocolate treat that won't make you feel like you throw your entire day away.  I love these recipes because I can incorporate a protein product, make just enough for one and feed my chocolate craving all within 30 minutes or less.  It's delicious portion control at it's finest and super easy to make.  The two recipes below I found on Pinterest and then added my own personal twist to it.  Keep in mind, with any of my recipes always feel free to make it your own!


Delicious Chocolate Cinnamon Lava Cake
Roughly 5-10 mins total

1 packet of IP chocolate drink mix
1 egg white
1 tsp baking powder
1 tbsp olive oil
1 packet Stevia In The Raw (add 2 if you would like sweeter)
Walden Farms chocolate syrup
Walden Farms cinnamon peanut spread
splash vanilla
sprinkle cinnamon



Mix ingredients, add water (VERY little is needed) until batter is formed.  Microwave in bowl on top of a plate until done (usually 45 seconds - 1 minute).  Spread small amount of WF cinnamon peanut spread on top, drizzle WF chocolate syrup and sprinkle light with cinnamon.  Enjoy!

Crazy-Good Cappuccino Cookies
Roughly 5 min prep, 20 min cook

1 packet IP cappuccino drink mix
1 egg white
1/2 tbs baking powder
1 packet of Stevia In The Raw (2 in you would like sweeter)
Splash vanilla
2 tbs Walden Farms chocolate syrup

Preheat ovan to 350 degrees F.  Mix all ingredients until batter is formed.  Pre sheet with Pam spray and add batter to pan (the size you add to the pan will be the size of the actual cookie).  Bake 20 mins. Drizzle WF chocolate syrup on top & enjoy!

You can even make sandwiches with them and the WF cinnamon peanut spread or add low fat cool whip on top!



This cake & cookie recipe is great for an afternoon snack or evening snack.  Low in calories, high in protein & super easy to make.  Great on those days that you're really craving something sweet & don't have a lot of time to bake.  Have any recipes you would like to share? Share below!

Top 6 Reasons Why Dieters Are So Successful

     Over the years of struggling with my weight (26 years to be exact) I always found it difficult to stick to a diet long enough to shed the needed lbs.  I just couldn't understand why I was loosing such small amounts of weight and found it difficult to stay on track.  Honestly, I felt addicted to food and my emotions about my weight spiraling out of control.


     One day, one of my clients came into the salon for me to beautify her for a night out on the town.  SHE LOOKED FABULOUS!!!  So of course, my questions stated to flow as to what her secrets were to looking so awesome.  Now lets be honest ladies (and gentlemen) THERE IS NO SECRET!!!!!!  It's our own minds telling us otherwise that the people who look so fabulous found a secret recipe for success when in actuality they found a customized formula for success.  They took their life and positive mindset of "I'm going to do this!" and found a "diet" that helped them shed those unwanted pounds.  Any who, my client started to tell me about Ideal Protein and the program that they offered just down the road from my work.  It consisted of the following:

- 3 of their products a day (they have mucho to choose from)
- 4 cups of veggies a day (some are restricted)
- vitamin regime
- 8 oz of my own home cooked protein
- 64 oz water a day (at least)

You weren't required to work out which worked out to my benefit because I was busy making excuses as to why I couldn't anyways.  My client had lost a whopping 30 lbs in 3 months and was smiling from ear to ear.  This diet was something I NEEDED to check out!  Before I knew it, I met with the fabulous Charlotte (Julie is amazing too!) in the North Reading clinic and I was singed up and ready to go!  My mind was COMMITTED to this diet and my life & bad habits of eating were about to change for the good!  I am happy to say that I have lost a total of 72 lbs in 5 months, regularly work out every other day and I've never felt better in my life!  I am still currently on the diet but only have roughly 10 more lbs to loose until I'm at my weight goal.

     I often get asked how I did it, how I was so successful and why this diet?  I did it because I was determined and knew it needed to be done.  I was so successful because I was 100% strict and never varied from the diet.  If it was not allowed I DID NOT EAT IT!!!!! Lastly, I love this diet because I needed a strict diet that was an easy brainer.  The "oh you can have half that sandwich" or "just a few fries" didn't work for me!  I wanted the entire sandwich and a basket of fries on the side . . . . catch my drift! I was not a portion control, stop eating when you're full kinda girl.  I was the oh my god, I haven't had time to eat breakfast or lunch today so let me stuff the 3 meals down in one sitting and end with some ice cream kinda lady.  However, though out the diet I have found the following tips to be helpful to any dieter on any specific diet:

1. Eat Enough Protein
     This right here is your powerhouse to keeping you full.  It keeps you from mindlessly snacking, overeating and your tummy happy.  You don't want to over do it with the protein because and over proteinized diet long term can cause issues with your liver and kidneys.  Please consult with a nutrionist to find out the exact amount of protein you need a day.



2. Watch Your Portions
     I am a huge believe that my eyes are almost always bigger then my stomach.  I always ask for double veggies (instead of 1/2 veggies and 1/2 starch) when I go out to restaurants and ask them to sauté them in only olive oil/salt/pepper and I add lemon.

3. Cut Out Those Excess Carbs/Sugars/Fats
     If I can just stress to you something it would be to please look at the nutritional labels on the back of your food or google "nutritional value of XXX"  This knowledge, of lack there of, can make or break a diet.  Don't get me wrong, I will allow myself a "cheat day" once I've phased out of the diet but I will be watching everything 6 days out of the week.

4. Exercise At Least Every 48 Hours
     Find something that you actually enjoy to keep you moving.  There are so many different activities that you can try that something is bound to spark your interest.

5. Make Veggies Apart Of Your Life
     I really try and incorporate lots of green vegetables that are lower in carbs and sugars.  I know that it sounds crazy when I talk about carbs and sugars in reference to veggies however corn, sweet potatoes and carrots are some of the many that contain mucho sugars.

6. Stick To A Positive Mindset
     I don't care what program it is, if you are not ready to commit and loose the weight from the beginning, then it will be a struggle from day one.  There is no way I would have been able to loose this amount of weight in such a small time frame without the dedication and commitment.  Diets are difficult but the payoff is beyond rewarding and one of the greatest feelings.

Smoked Fish Stew

     I love love LOVE soups in the winter weather. It warms my belly & my soul 💋. Whatever I do with food I cook it with passion. I really enjoy cooking, thanks to my grandmother & mom but sometimes I lack the time to cook delicious meals.  I wanted to find a way to incorporate fish into my soups and make it super fast & easy. To be honest, I was a bit skeptical of boiling fish at first because I've baked, fried, grilled and breaded it before but never boiled it. When you hear boiling anything (fish, vegetables, chicken, beef) you instantly think ummmm so wheres the flavor? Well I've created, from scratch & on a budget, a delicious soup for yourself & to share with others. Even the ladies at the salon I work at couldn't get over how delicious it smelled!  

     I love this soup because you don't have to follow the recipe exactly and its low carb and super easy to make (even in a slow cooker).  When I say whatever is in your fridge you can throw in for veggies I MEAN IT. Also, if you prefer a certain fish over another then use that fish instead.  I made this soup for a party and everyone loved it. Also, feel free to cut the recipe in half because this does serve up to 8 persons. 

Ingredients:
Fish:
1 large piece of smoked salmon
1 bag fresh muscles 
1 1/2 cup lobster meat (fresh is best)
1 1/2 cup of crab meat (fresh is best)
2 cans of tuna (Torino tuna or regular)

Veggies:
2 stalks of celery 
2 tomatoes 
1/2 cubed white onion 
1 bag of baby spinach 
1/2 carton of mushrooms

Seasonings:  
2 cloves if garlic
4 tbs dill
1 bay leaf
1 lemon
1 tsp of salt & pepper
2 tbs of distiller white vinegar
3 tbs of extra virgin olive oil
Pinch of hot pepper flakes & parsley
10 sprays of I Can't Believe It's Not Butter 

Liquids:
1 Kitchen Basics Seafood Stock
2 cups water
1 cup of skim milk

As you can see, even people with a gluten intolerance can eat this soup (so even my little sister can enjoy it!!)



Directions: 
1. Pre-heat sauté pan & add oil & sauté garlic 
2. In sauté pan, add vegetables in the following order: tomatoes, mushrooms, spinach. Cook 5 mins in between each veggie.  Salt & pepper (if you are adding any other veggies, make sure you add them while keeping in mind the "harder" veggies need to be cooked longer)


3. In large pot, add broth, water and milk then bring to boil (you can make it thicker by adding 1 can of tomateo paste if you choose)
4. Add all seasonings, lemon, onion & vinegar while keeping at boil for 5 mins (I add onions here & not in beginning so they don't caramelize & add sugar to my dish. If you prefer them caramelized then add them with the garlic)  
5. Add veggies to pot and cook for 10 minutes.  (Use large spoon to break up tomatoes to create "paste")  
6.  Add fish & keep at medium heat for 7 mins. Fish will begin to separate which is an indication fish is cooked & ready to enjoy. 


7. Remove bay leaf & reduce to simmer or add to crock pot on low heat until ready to serve!


What else you can add:
- hot sauce
- any colored peppers (red, yellow, green, orange)
- tomateo paste to make it thicker
- brussel sprouts
- cauliflower 
- basil to add "sweetness" 

This is super easy to make, low carb, low fat, low sugar, gluten free (without paste) and no MSG added. Packs a punch of flavor & can be enjoyed for a few days, with the family & at big parties!  Leave your comments below!  Did you alter the recipe in any way? Forgive Thyself

     Did you cheat today?  Had that extra cookie over the weekend ON TOP of that piece of cake?  Don't fret, forgive thyself! When I was my heaviest, I used to beat myself up over just one piece of "bad food". It was negative, made me eat "bad" for the rest of the day & sometimes threw my mood off. I used to beat myself up!  With any lifestyle, YOU are the one who dictates if YOU will take charge & get back on track or throw the rest of the day away. 

     Lets face it, dieting isn't easy but it starts with determination & a clear understanding of what you need to do to get back on track. I love to do natural cleanses. This isn't a daily or even weekly ritual I've started but I enjoy doing them once a month. I prefer natural over chemical detoxes for just the simple fact that I want to detox myself & not fill my body with unnatural substances.  My favorite one is water, lemon, cucumber & mint. So yummie & can be enjoyed all day long. A fun trick is to make the mixture into ice cubes and add to your water or it can be a cute way to spice up water at a party!  Strawberries/lemons, apple/cinnamon, orange/blueberries and cucumber/watermelon/rosemary are also some really delicious natural ways to detox.

- aid in weight loss

- adds vitamins & mineral naturally
